The 2022 edition was special because the focus was on technological innovations and the actors of change in the restaurant industry. You guessed it…the youth were in the spotlight! They were able to get inspired, connect and contribute through multiple interactive Foodindustry exhibits.

 

Eddiol was able to enjoy a strong turnout of international visitors. To be honest, it wasn’t easy every day: Our team had to try out the Arabic language and believe us, it’s no cakewalk!

You just got your Samosa Making Machine, and you’re ready to start making samosas. There’s just one problem : you don’t know what to do first. Don’t worry, we’ll have the machine unpacked and up and running in no time!

#1 Supply the machine with 110/220 volts to the mains
 
#2 Supply the machine with compressed air and make sure that the pressure is about 6.5 bars (check and adjust the pressure on the pressure gauge of the filter)
#3 Turn on the machine (On/Off button on column B) The indicator light is on.
 
#4 Fill and place the food glue tank (Approximately 1 liter every two hours)
 

For those of you using robot A, your start-up stops here. All you have to do is prepare your filling and dough strips.

#5 Feed the bowl with refrigerated stuffing (about 3.5kg every 20 minutes)
#6 Put the protection back on the top of the bowl.
#7 Feed the machine with a strip of dough using one of the removable deposit trays to be placed on its location (strip of dough stripped to avoid sticking together)
#8 Loading of the filling, press key 9 of the automaton 5 times to feed the filling into the depositing system.
#9 Loading of the glue, press the key 8 of the automaton while checking the progress of the glue at the entrance of the electrovalve (translucent tube)
Tip: Place a small container under the glue tubes during loading to prevent the glue from falling onto the machine!
#10 Make sure that the protective covers are in place.
The machine is now ready to use !

The Indian samosas, an easy classic to cook !

Before you get confused… Eddiol is well specialized in the design of automatic samosa folding machines. But what’s stopping us from sharing some delicious samosa recipes with you for your entertainment?

Every month, Eddiol brings you new ideas to make new varieties of samosas. Today, we offer you the most classic version: the Indian samosa. Accompanied by a vegetable salad, this recipe will make you feel less guilty while enjoying a delicious and CRUNCHY dish !

Ingredients: (For 6 people, yes we can make samosas in small committee too! )

For a big production, you will just have to multiply the quantities.

  • 2 tbsp. vegetable oil
  • 2 Onions
  • 2 cloves garlic
  • 2 large handfuls spinach
  • 1 firm potato
  • 2 leek whites
  • 1 tsp. coffee curry powder
  • 1 egg yolk
  • 1 tbsp. Milk
  • Salt / Pepper

 

Don’t forget the pasta strips (about 12-15 strips)

Ready for the easy and quick recipe ?

#1 Peel and cook the potato for 15 minutes. Dice it.

#2 Peel and chop the onions and garlic cloves. Rinse the spinach thoroughly, drain it and remove the tails from the large leaves. Thinly slice the leek whites.

#3 Heat the oil in a large wok. Add the onions and garlic, curry powder and cook, stirring, for 5 minutes. Add leek whites and potato. Add salt and pepper. Cover and cook for 10 minutes. Then add the spinach. Cover and cook for 3 min on low heat. The spinach will lose volume and water. Mix and remove the wok from the heat.

#4 Your stuffing is ready, now it’s time to fold the samosa : A very simple step thanks to the Eddiol machinesIf you are equipped with Robot A or Robot B, place your strip of dough on the machine. Add the amount of filling to the strip and let the machine apply the glue dots, fold and eject the samosa.

 

With the Robot C, you are the carrot king! Place your pasta strips and stuffing in the stuffing bowl. The machine takes care of the whole process.

Tips: To facilitate the dosing of your filling, we recommend using the filling moulds proposed by Eddiol. They guarantee an even and compact dose in a triangle shape for a perfect distribution on the samosa.  

 

 #5 If you choose to cook in the deep fryer, allow 5 to 7 minutes cooking time in oil at 180°C. Drain and place on paper towels to remove excess oil.

 

To bake them in the oven, brush them with beaten egg yolk and bake them for 15 minutes in an oven preheated to 180°C.

However, our samosas folding machines don’t work with all kinds of fillings. Well, in theory it does, but your stuffing must meet certain criterias so that it doesn’t get stuck in the machine.

Here are some tips for cooking your filling, adapted to the operation of the samosas making machines:

Most of the time, the filling is made of potatoes, peas, onions and spices. Use your imagination and make delicious chicken, beef or even tuna samosas! Add some vegetables and spices and enjoy !

Our automatic samosas machines accept your filling, whether it is cooked or raw. Just be sure to follow these three guidelines :

  • Meat ingredients can be cooked or uncooked, vegetables can be integrated fresh, the dosing system can accept a particle size of no more than 5 to 6 mm for all ingredients.
  • In order to facilitate its flow into the dosing system the filling mixture should not be too wet or too greasy. It is important that the filling “holds” and “clings” to the dough.

If you respect these two points, you can cook the stuffing of your choice. We know the classics but we expect you to be innovative and creative with new recipes : Let’s share our recipes together !

Did you know?

Uneven filling of samosas gives a bad appearance. It is necessary to fill the samosas evenly with the filling so that it does not come out on one side or the other when folding or baking.

The amount of filling you put in also depends on the size of the dough sheet of your samosas.

Cleaning your samosa machine is quick and easy !

What can we say about these machines other than their ease of use and versatility? Our main goal was to make them suitable for all snacking industries and production lines to suit you, no matter how you work.

Cleaning your samosa folding machine is often a scary step, but it’s not rocket science! All you need is a little care to ensure the safe, long-term use of your machine. It will also give you a better quality product!

Let’s get down to business, there’s not much to explain about cleaning a samosa folding machine, it’s pretty simple. We promised you a quick cleaning and easy maintenance, it’s done! Here are the few things you have to do after each use:

First important and reassuring point (for you!), no matter which machine you choose, its small size makes it easily transportable for cleaning.

3 areas of the machine have to be cleaned :

#1 The glue circuit

We are talking here about the pump and the solenoid valve.

  • Empty the glue tank and clean it thoroughly
  • Fill the tank with clear water
  • The cleaning of the glue circuit can be done by using the key 8 of the PLC and 2 liters of clear water
  • Repeat the operation a second time to make sure that the circuit is well cleaned
  • Leave clean water in the circuit so that the system is always wet

 

We advise you to provide a container to collect the cleaning water.

 

 #2 The stuffing circuit (Robot B & C) 
  • Remove all the knurled nuts from the removable parts, place them in a washing container so that they do not get lost
  • Remove the bowl with the auger support and collect the remaining stuffing

 

#3 Folding tray and machine box
  • Use water with a bactericidal product, rinse well with clear water.
  • ATTENTION, you must first cut off the electrical supply to the machine (CONTACT + 110/220V SOCKET)
  • Cut off the compressed air supply
  • You can now wash the machine with bactericidal products before reassembling all the parts.

Connect a gun to the compressed air hose and blow the water out of the machine.

And that’s it! It’s done, and it took you about 20 minutes maximum! This step should be done after each use to keep your machine in good condition.

As for the installation of your robot, it can be done by your own technicians. It is nevertheless preferable to foresee an assistance of Eddiol SpecialDimension technicians in order to train your team to the use and the adjustment of the machine.

Eddiol joined the world's largest food event: the NRA Show, a four-day event designed to connect restaurant, foodservice, hospitality and tourism professionals.

WE DID IT ! For the first time, Eddiol flew to Chicago to participate in the NRA show, which was held from May 22 to 25. This unique experience allowed the Eddiol team to meet with individuals and professionals from the food industry. These were very enriching moments of exchange and experience, sharing that we will not forget !
